The best Pinot Noir grapes are used for this very special rosé. The ripe berries are pressed only lightly, the light juice is fermented very cool and without any skins. Vinification: very gentle, reductive processing of the grapes, cooled fermentation in steel tanks, then in small wooden barrels at a slightly higher temperature.
